The dances performed by Susana y José were always their own creative work. All the dances rehearsed with students during his teaching career are also choreographies by José de Udaeta. Numerous ballet companies and opera houses have hired José de Udaeta as choreographer, such as:
- 1970 the Harkness Ballet, New York
- 1978 the Royal Danish Ballet for the Bournonville-Ballet in "Toreadores". He performed the same duties with the Royal Opera House in Stockholm in the same year.
- 1983 the Dallas Ballet Company, USA
- 1985 he choreographed the flamenco dance sequences for the opera "Carmen" staged by Herbert von Karajan at the Salzburg Easter Festival; the sequences were performed by dancers from the Ballet Español de Madrid
- 1987 he devised the first staging of Hans Werner Henze's "Fandango" (composed in 1985)
- 1988 he choreographed "Variaciones flamencas" for the Landestheater Salzburg
- 1989 he choreographed the "Arlésienne-Suite" by G. Bizet for the Deutsche Oper am Rhein, Duisburg, Germany
- 1991 he choreographed the dances for the opera "Carmen" staged by Carlos Saura at the Württembergisches Staatstheater, Stuttgart
- 1993 he was responsible for parts of the choreography of the ballet "Don Quixote" at the State Opera House, Berlin
- 1999 he did the same for the Ballet of the Aalto Opera House in Essen, Germany.
Starting in 1993 José de Udaeta choreographed a series of full evening dance programmes for the Spanish Arsis Chamber Ballet. Together they created the dance show "La Castañuela Viva" and went on tour, with José de Udaeta as the soloist from 1994 onwards.
